Do you have a favorite pasta shape? Maybe a niche question, sure, but some people out there feel very passionately about their pasta. I’ve met diehard bowtie fans and people who would only have penne, while I’m more of a spaghettini guy myself.
The reason why I ask is because your favorite pasta might be shaking in its boots in the face of a brand new pasta shape that has exploded in popularity.
A new breakthrough has been made in the world of cooking.

As any pasta lover knows, there’s a great variety of pasta shapes that all have their specific uses and dishes they work best in. Be they the best vessel for a certain sauce, or the best complement to differing types of protein, they all have a very special role.
One guy wanted to think bigger, beyond the realm of currently-existing pasta shapes.
Meet Dan Pashman, creator of the newest pasta shape that’s sweeping the nation.
Pashman has been involved in the culinary world for some time now as a food personality, host of a food-centric podcast called The Sporkful , and as a James Beard Award winner.
He can now add culinary innovator to his list of credentials, as his newly-designed pasta shape is now a reality, and it’s called cascatelli.
Pashman was sure to document his journey to creating cascatelli.
His story lives in a five-part podcast series he titled “Mission ImPASTABLE”, in which he explains the various places he went to learn from the masters.
This includes the Pasta Lab in North Dakota State University and Sfoglini pasta factories, who are known for their higher quality production line.
But why did Pashman even set out to make a new pasta shape?
He believed there was no shape that quite met his desires for ‘sauceability’, ‘forkability’, and ‘tooth-sinkability’.
He designed cascatelli with these traits in mind. The trough along the center makes for perfect sauce-carrying abilities, the width and curved shape make for easy fork-stabbing, and it features right angles that make it a delightful experience to bite into.
It seems his design choices worked out for the best, too.
Cascatelli is just flying off the shelves. It can be purchased directly from Sfoglini’s website , but orders are already backed up for weeks due to its popularity.
Pashman set out to create a new, perfect pasta shape, a pasta shape for the people, and boy did he succeed.
Not only are sales up, but it’s a social media hit.
Across tons of platforms, you can find people showing off their cascatelli haul and the absolutely delicious-looking meals they’re making with it.
Not only did Pashman make a delicious, functional pasta shape, but a beautiful one too! Every photo looks stunning, just as every dish looks scrumptious!
