- ¾ cup bittersweet chocolate chips
- 1 cup all-purpose flour
- 1 tablespoon cocoa powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 6 tablespoons butter, softened
- 1 cup brown sugar
- 2 small eggs
- 1 teaspoon vanilla extract
- 2 cups bittersweet chocolate chips
- 30 large marshmallows
Melt ¾ cup chocolate chips in the microwave or over a double boiler. Set aside to cool.
Sift flour, cocoa powder, baking soda, and salt together in a bowl, and stir together.
Beat the butter and sugar together until well combined and creamy. Beat in eggs one by one. Add cooled melted chocolate and vanilla extract. Continue mixing until ingredients are well combined.
Fold dry ingredients and 2 cups chocolate chips into the wet mix and stir until combined.
Scoop batter with a 1 tablespoon scoop and space 2 inches apart on a baking sheet lined with parchment paper.
Bake at 350 degrees F for 8 to 9 minutes. These cookies should be brownie-like and soft in consistency. Once baked, pop a large marshmallow on top and put it back in the oven on broil for 1–2 minutes for a toasted effect.
